As usual very detailed and well explained. I never knew that Salt was initially used for preservation and spices were used in hotter regions...It makes sense now. In the country I am originally from, Pakistan. The north (Peshawar - where I am from) we don't eat as spicy as the south and it now makes sense why. We are located in the colder regions of Pakistan and the south is located in the hotter regions and they do eat very spicy and their temperatures easily hit 45 degrees or more. I never knew why we did not eat as spicy but here you go now i know!
